Champagne Carbon Blanc de Blancs 2005 Grand Cru Brut Gold Sleeve Luminious

The character of the Chardonnay is faithful and very identity, the first scents reveal the macerated white fruits on a slightly mentholated fatty middle. The intensity then becomes clear to candied yellow citrus, white flowers and some aromatic herbs. The palate is unctuous, velvety and noticeably honeyed, it asserts itself in its heart by a tension reminiscent of the granny apple and lime. The final is chalk powder, seaweed flavors and lemony graphite perceptions are tasty. 

This cuvée will enhance delicate recipe such as a lime-scallop ceviche or some grilled red-mullet marinated with thyme and olive-oil.
